Easy Entertaining, Made Simple

There’s something special about gathering people around good food — not the fussy, stressful kind, but the comfortable, pull-up-a-chair, grab a plate, help-yourself kind.

At Hidden Brook Hollow, that’s always been the heart of entertaining: simple recipes, familiar flavors, and food that feels welcoming — not overwhelming.

But if I’m being honest, even creating a book about easy entertaining has reminded me of something important…

Sometimes, life gets in the way.

And that’s okay.

Entertaining Doesn’t Have to Be Complicated

For years, I believed entertaining meant everything had to be homemade, picture-perfect, and flawlessly timed.

What I’ve learned since then is this:
The best gatherings aren’t about doing everything from scratch — they’re about feeling relaxed enough to enjoy the people you’re feeding.

From casual family gatherings to last-minute get-togethers with friends, simple party food can still feel intentional, cozy, and special.

When appetizers, snacks, and shareable dishes are designed to be flexible and forgiving, hosting becomes less about performance and more about connection.

That’s exactly what inspired my upcoming ebook, Party Bites & Shareables — a collection designed for:

  • Beginners who want simple, no-stress recipes
  • More confident cooks who need quick, reliable go-to options
  • Hosts who love semi-homemade shortcuts that still feel thoughtful
  • Anyone who wants food that looks impressive but doesn’t require hours in the kitchen

Whether you’re hosting a holiday, a game night, or a cozy weekend get-together, these recipes are meant to support you — not exhaust you.

A Quick, Honest Note About the Delay

I want to take a moment to share something openly.

This ebook was originally planned for before Christmas and New Year’s — and while I fully intended to have it ready, life had other plans.

Between everyday responsibilities, unexpected detours, and simply needing to slow down and recalibrate, I realized I couldn’t rush something meant to help others feel less rushed.

Rather than pushing it out unfinished or misaligned, I chose to give it the time and care it deserved.

Thank you — truly — for your patience and your trust. I never take either lightly.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings: 8
Course: Appetizer
Cuisine: American

Ingredients

  • blocks (12 oz total) cream cheese, softened
  • ½ cup ranch dressing
  • ¾ cup hot sauce or wing sauce (Frank’s RedHot recommended)
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese blend shredded, divided
  • 3 cups cooked chicken shredded or chopped
  • 1 tsp black pepper
  • Green onions sliced (for garnish)
  • Blue cheese crumbles for garnish
  • Celery sticks, carrot sticks, crackers, pita chips, or sliced bread (for serving) (Gluten-free versions if needed)

Equipment

  • Mixing bowl
  • Small baking dish
  • Spoon or spatula

Method

  1. Preheat oven to 350°F (175°C). Lightly grease a small baking dish or individual ramekins with non-stick spray. Set aside.
  2. In a food processor or mixing bowl, beat the cream cheese until smooth. Add ranch dressing, hot sauce, mozzarella cheese, ½ cup of the cheddar blend, and black pepper. Mix until well combined.
  3. Stir in the cooked chicken until evenly distributed.
  4. Spoon the mixture into the prepared baking dish or ramekins. Sprinkle the remaining ½ cup cheddar cheese evenly over the top.
  5. Bake for 20–30 minutes (or 15–20 minutes for ramekins), until heated through and the cheese is melted and lightly golden.
  6. Garnish with sliced green onions & blue cheese crumbles and serve warm with celery sticks, carrot sticks, crackers, pita chips, or bread.

Notes

  • Rotisserie chicken works great for this recipe and saves time.
  • For extra heat, add a little more buffalo sauce or a pinch of cayenne pepper.
  • This dip can also be made in a slow cooker—simply combine ingredients and heat on low until warm and melted.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated before serving.
  • Serve with tortilla chips, crackers, or fresh vegetables like celery and carrots.
  • This recipe can easily be made gluten-free by using certified gluten-free buffalo sauce and serving with gluten-free chips, crackers, or vegetables.
  • If preparing for someone who follows a gluten-free diet (including those with celiac disease), use certified gluten-free ingredients and avoid cross-contamination by using clean utensils and surfaces.

Entertaining That Leaves Room for What Matters

The older I get, the more I believe this:

People don’t remember if everything was homemade.
They remember how they felt in your home.

Relaxed.
Welcome.
Comforted.
Included.

If this ebook helps you set the table, light a candle, and actually sit down and enjoy the moment, then it’s done its job.

Easy Entertaining Essentials for Party Bites & Shareables

There’s something so special about setting out a spread of small bites to share. You don’t need anything elaborate — just a few thoughtful pieces that help everything feel easy, inviting, and ready for guests to enjoy.

Here are a few of my go-to essentials I reach for when hosting or putting together a simple spread:

Charcuterie or Serving Board

A good charcuterie or serving board is one of those pieces I use all the time when entertaining. It instantly makes everything feel a little more special, whether you’re arranging meats and cheeses or simply laying out a few snacks to share.

👉 Perfect for creating a simple, beautiful spread

Appetizer Picks

Little details like appetizer picks can make a big difference. They’re great for serving bite-sized foods, keeping things neat, and adding a touch of charm to your presentation.

👉 A simple way to elevate any party spread

Small Dip Bowls

I always like to have a few small dip bowls on hand for sauces, dips, or even small snacks. They help keep everything organized and make serving feel a bit more intentional.

👉 Keeps your spread neat and easy for guests

Appetizer Plates

Having a set of small appetizer plates makes it easy for guests to grab a little of everything. It’s one of those simple things that makes hosting feel more comfortable and relaxed.

👉 Perfect for easy, grab-and-go serving

Tiered Serving Tray

When I want to make things feel a little more special without extra effort, I’ll use a tiered serving tray. It adds height and interest to the table and helps maximize space when serving multiple items.

👉 Great for creating a beautiful, layered presentation

Simple Napkins

It might seem small, but having nice napkins on hand makes everything feel more complete. Whether disposable or reusable, they’re a must for easy, stress-free hosting.

👉 A practical touch that ties everything together

Cheese Knife Set

If you’re serving cheeses or spreads, a small cheese knife set is a nice addition. It makes serving easier and adds a simple, thoughtful detail to your board.

👉 Perfect for effortless serving and sharing
