Buffalo Chicken Dip

There’s just something about a warm, cheesy buffalo chicken dip that instantly brings people together. It’s simple to make, full of bold flavor, and always one of the first dishes to disappear from the table. Whether you’re hosting a gathering, heading to a potluck, or putting together an easy snack spread, this recipe is a reliable favorite you’ll come back to again and again.

Ingredients
  

  • blocks (12 oz total) cream cheese, softened
  • ½ cup ranch dressing
  • ¾ cup hot sauce or wing sauce (Frank’s RedHot recommended)
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese blend shredded, divided
  • 3 cups cooked chicken shredded or chopped
  • 1 tsp black pepper
  • Green onions sliced (for garnish)
  • Blue cheese crumbles for garnish
  • Celery sticks, carrot sticks, crackers, pita chips, or sliced bread (for serving) (Gluten-free versions if needed)

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a small baking dish or individual ramekins with non-stick spray. Set aside.
  2. In a food processor or mixing bowl, beat the cream cheese until smooth. Add ranch dressing, hot sauce, mozzarella cheese, ½ cup of the cheddar blend, and black pepper. Mix until well combined.
  3. Stir in the cooked chicken until evenly distributed.
  4. Spoon the mixture into the prepared baking dish or ramekins. Sprinkle the remaining ½ cup cheddar cheese evenly over the top.
  5. Bake for 20–30 minutes (or 15–20 minutes for ramekins), until heated through and the cheese is melted and lightly golden.
  6. Garnish with sliced green onions & blue cheese crumbles and serve warm with celery sticks, carrot sticks, crackers, pita chips, or bread.

Notes

  • Rotisserie chicken works great for this recipe and saves time.
  • For extra heat, add a little more buffalo sauce or a pinch of cayenne pepper.
  • This dip can also be made in a slow cooker—simply combine ingredients and heat on low until warm and melted.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated before serving.
  • Serve with tortilla chips, crackers, or fresh vegetables like celery and carrots.
  • This recipe can easily be made gluten-free by using certified gluten-free buffalo sauce and serving with gluten-free chips, crackers, or vegetables.
