- Preheat oven to 350°F (175°C). Lightly grease a small baking dish or individual ramekins with non-stick spray. Set aside.
- In a food processor or mixing bowl, beat the cream cheese until smooth. Add ranch dressing, hot sauce, mozzarella cheese, ½ cup of the cheddar blend, and black pepper. Mix until well combined.
- Stir in the cooked chicken until evenly distributed.
- Spoon the mixture into the prepared baking dish or ramekins. Sprinkle the remaining ½ cup cheddar cheese evenly over the top.
- Bake for 20–30 minutes (or 15–20 minutes for ramekins), until heated through and the cheese is melted and lightly golden.
- Garnish with sliced green onions & blue cheese crumbles and serve warm with celery sticks, carrot sticks, crackers, pita chips, or bread.
Notes
- Rotisserie chicken works great for this recipe and saves time.
- For extra heat, add a little more buffalo sauce or a pinch of cayenne pepper.
- This dip can also be made in a slow cooker—simply combine ingredients and heat on low until warm and melted.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated before serving.
- Serve with tortilla chips, crackers, or fresh vegetables like celery and carrots.
